Cucumber Salad

saladSo, I’m quite excited about my new CSA. Although Brandon and I only have half shares we still have to throw some of the food away, so I try to use as much as I can. This week we got four cucumbers, which unfortunately I can’t stand. I know a lovely sister of mine also despises them so here is a very simple recipe to follow:
1. Thinly slice four cucumbers
2. Chop up a small (I used a large, because I love them) white onion.
3. Put in bowl together, set aside
4. Boil 1 cup of white vinegar, 1/2 cup of water and 3/4 cup of granulated sugar
5. Pour over veggies and then mix in one tablespoon of dill in mixture. Stir and refrigerate for one hour.
That’s it!
Now, the result. Pretty good! I repeat, I hate cucumbers so the fact that I can eat them alone is pretty good. It’s a great summer salad.
My next goal-cooking cohlrabi! EEK! Help!
