home-made snack bars, “lara bar” style

In an effort to do more things natural, I’m trying to back away from the overly processed snack bar varieties like granola bars.  All the fake and excess sugar is really rather pointless.  I’ve started to really enjoy Lara Bars, partly because I’ve OD’d on the Clif bars after years of marathon and triathlon training.  I’ve never like Power bars, and Luna are a little too sweet.  For those other fine connoisseurs of ready-made snack bars, you know how pricey than can get.  The lara bar ingredient list, however, is very pedestrian — dates, almonds, and walnuts, give or take some other flavors.  It seems easy enough, so I thought I’d give it a try.  Fortunately for me (and you, fair reader) several others have tried before me.  I’ve adapted my recipe from those online, specifically the foodforliving.wordpress.com blog.


1     cup chopped, pitted medjool dates

1/3 cup dried cranberries

1/3  cup walnuts

1/3   cup raw almonds

1/4 cup raw cashews

1   tsp cinnamon

1/2 tsp of cardamom

1.  Combine  chopped dates and cherries in a food processor, and process until it forms a ball of sticky paste. Remove from the processor bowl.

2.  Combine nuts in food processor till crumbly.

3.  Add date mixture and combine.  Gradually add spices to ensure that they are evenly incorporated.

4.  Form a log/bar a cutting board and divide into 8 bars.  Individually wrap in foil to enjoy on the go.

  1. What “flavor” larabar is that? I’d like to try the chocolateandzucchini.com recipe as well. I wonder how similar it is. I’m with you, larabars are the only one of those “healthy” snack bars I like!

    Maybe I will go get myself one from our vending machine at work right now…chocolate version is all they have, not my fave cherry pie, but who’s complaining?
