Apple Raisin Bread-Modern Baker Challenge-Quick Breads

the batter was quite yummy.

Well, I was quite scared about this, being my first of many “challenges”, but it turned out quite nicely! This recipe was quite simple with very simple ingredients to find. At first, I thought most of these recipes would be either simple to make with ingredients you had to go out and get or difficult to make with simple ingredients. Fortunately, this one took it easy on me.
Shredding the apple took only a couple of minutes. I was a little worried that there would be too much juice from the apples and would make the batter too thin but they must have accounted for that because it was fine.

Really, after the apples, there wasn’t much left to it. I opted out of the walnuts. I know that most people love nuts in their muffins, cakes, cookies etc., but I’ve never been much of a fan. Maybe it’s because our mom hated nuts in baked goods as well. I always remember her changing the recipe just a bit when we were baking growing up.

It rose quite a bit while baking- more than I expected. I also expected to only eat this in the morning, but I was mistaken.

  1. I am making the Date/Walnut one today, and this one next week, and I cannot wait to get through today so I can make this one as this one sounds and looks just wonderful. Yours looks beautiful, love the color on this one.

  2. Congratulations for rising to the baking challenge, Marie. This looks tasty – and reasonably healthy! Bet Brandon was impressed – did he like it?
