Shredding the apple took only a couple of minutes. I was a little worried that there would be too much juice from the apples and would make the batter too thin but they must have accounted for that because it was fine.
Really, after the apples, there wasn’t much left to it. I opted out of the walnuts. I know that most people love nuts in their muffins, cakes, cookies etc., but I’ve never been much of a fan. Maybe it’s because our mom hated nuts in baked goods as well. I always remember her changing the recipe just a bit when we were baking growing up.
